It offers a mild, slightly nutty, less-sweet flavor than orange types — think Yukon Gold potato meets sweet potato — making it perfect for savory dishes, fries, chips, roasting, soups, gnocchi, tempura, or anywhere you want a sweet potato that doesn’t overpower with sugar.
